Brisket has to be purchased from SYSCO Central Texas the week before the cook. Prep and cook all occurs on Saturday. Sausage has to be purchased. Brisket has to be trimmed and seasoned. The BBQ pits will have been cleaned prior to Saturday. The Main Cook starts preferably after the trimming/seasoning, at 10AM and continues until 6PM. We need volunteers for all activities, but the main cook requires the most to be available the full time, but is also a great time to socialize with other brothers and any family members assisting, so all are welcome even if you don’t sign-up.
